Portable Comfort Food – Mini Sweet Potato Pot Pies



These little cuties are soul warming food. Personally I love pie, all kinds of pie, but especially the savory flavor you get in a pot pie. The flaky crust mixed with the earthy spices and creamy filling mixed with cheeses, vegetables and some sort of meat is a combination designed to put you in some sort of hypnotic state!

Well, here’s my contribution to the comfort food king: Mini Sweet Potato Pot Pie.

Mini Sweet Potato Pot Pies

I <3 anything mini-fied but pot pies? ooooooo, they’re not only super cute but packed with flavor. The mild sweetness of the sweet potato, otherwise known as a yam during the holidays, is just divine when paired with some herbs, spices, vegetables and chicken. And the tiny-ness of it makes perfect for portion control or eating on the go…or even getting the kids to try it. (After all, it did come out of the muffin tin so it must be good!)

Easy & customizable recipe

Like most of my recipes, you can change out ingredients or adjust the type and amounts of spices and herbs to suit your family’s tastes. BIT if you use the canned sweet potatoes, like I did in this recipe, you’ll want to increase the amount of herbs and spices to balance the sweetness of the brown sugar syrup the potatoes are canned in. To reduce the sweetness of the canned sweet potatoes, you can also drain the syrup before pureeing but I didn’t in this recipe.

For a lower fat, lower calorie version

You can peel, chop and boil (or bake or nuke) raw sweet potatoes till they’re done then just puree with a pinch of salt and some water or chicken stock.
